What's the word for a food that cleanses your palette between courses in a meal? I think the word is French.

I am a former chef, trained in classical french cuisine, and like the term used with a pre dinner item, they do use the term ';Amuse Bouche';, which loosely means fun in the mouth.What's the word for a food that cleanses your palette between courses in a meal? I think the word is French.

An amuse-bouche, also called an amuse-gueule, is a tiny bite-sized morsel served before the hors d'Ĺ“uvre or first course of a meal. These, often accompanied by a proper complementing wine, are served as an excitement of taste buds to both prepare the guest for the meal and to offer a glimpse into the chef's approach to cooking.
You could call it the palette cleanser or maybe the intermezzo as it sometimes called.
I think that you're looking for the Italian word ';Intermezzo';. Sorbet is commonly used as such.
